Tortilla Black Bean Casserole
Recipe from What can I bring cookbook
2 cups of chopped onion
4 cups of seeded and chopped green and/or red bell pepper
1 (14.5oz) can tomatoes, undrained
1 cup salsa
2 garlic cloves, minced
2 tsp ground cumin
2 (15oz) cans black beans, drained
12 (6 inch) corn tortillas
3 Cups shredded Monterey Jack cheese
Simmer the first 6 ingredients in a skillet; add black beans
and simmer until thoroughly heated. Layer one third of each bean mixture,
tortillas, and cheese in a 9X13X2 inch baking dish; repeat layers twice. Bake
at 350 degrees for 30 to 35 minutes. Serves 8
