Recipe for Pizza Rice
Recipe from Minute Rice Fast Fabulous Meals
1 green pepper, chopped
1 garlic clove, minced
2 TBSP butter
1 ½ cups water
1 can (8 ¼ oz) whole tomatoes
1 envelope Italian salad seasoning dressing mix
1 ½ cups minute rice
1 cup shredded mozzarella cheese
½ cup sliced pitted ripe olives
1 TBSP grated parmesan cheese (opt)
Cook and stir pepper and garlic in hot butter in a large
skillet until tender. Add water and tomatoes, breaking up tomatoes with spoon.
Stir in salad dressing mix. Bring to full boil. Stir in rice, ¾ cup mozzarella
cheese and the olives. Cover; remove from heat. Let stand for 5 minutes. Fluff
with fork. Sprinkle with the remaining mozzarella cheese and Parmesan cheese.
Serve with hamburgers, tomato slices, onion rings and lettuce or your favorite
main dish. Makes 4 servings.
