Beef Goulash Soup
Better Homes and Gardens Soups and stews 1978
4 Slices of bacon
2 medium onions chopped
2 cloves garlic minced
1 to 1 ½ TBSP Paprika
2 tsp Salt
2 pounds stew meat, cut into 1-inch cubes
1 Medium tomato cut up
1 6oz can tomato paste
3 medium potatoes, peeled and finely chopped
2 cups water
In Dutch oven cook bacon until crisp. Drain, reserve
drippings, crumble bacon. Cook onions and garlic in reserved drippings till
tender. Stir in paprika and salt. Add meat cubes and bacon, cook and stir for 2
to 3 minutes. Add tomato, tomato paste and 2 cups of water. Cover and simmer 1
¼ hours or until meat is tender. Add Potatoes simmer for 20 minutes Spoon off
fat. Serves 6.
