Bruschetta Chicken Bake
Recipe from Packaging from Stuffing mix
1 can (14.5 oz) diced tomatoes, undrained
1 package (6oz) stuffing mix for Chicken
½ cup water
2 cloves garlic, minced
1 ½ lbs. boneless skinless chicken breasts, cut into bite
size pieces
1 tsp dried basil leaves
1 cup shredded mozzarella cheese
Heat oven to 400 degrees. Mix tomatoes, stuffing mix, water
and garlic just until the stuffing mix is moistened. Layer chicken, basil and
cheese in a 3-quart casserole sprayed with cooking spray. Top with stuffing
mixture. Bake 30 minutes or until the chicken is done.
***my notes** This is good with leftover cooked Turkey or
Chicken. I would use crushed tomatoes instead of diced tomatoes. I would add
thinly sliced celery, and onions to the stuffing mix when you moisten it. ***
