Fiesta Skillet Dinner

Recipe from Land of Lakes Fast Scratch Recipes booklet 1997

1 lb. ground beef

1 cup uncooked instant rice

2 (14 ½) can chunky tomato with pepper and onions

½ cup water

4 ounces Cheddar cheese cubed into ½ inch pieces

1 cup tortilla chips

In a 10-inch skillet cook ground beef over medium high heat, stirring occasionally, until browned, drain.

Stir in rice, tomatoes and water. Cook until; mixture comes to a boil. Reduce heat to low. Cover; cook stirring occasionally until; rice is tender.

Stir in cheese, sprinkle with tortilla chips.

You can substitute tomatoes with any variety of tomatoes your choosing.
