Recipe for Pumpkin Bread
Recipe from Community cookbook, Georgia on my Plate cookbook
3 cups of sugar
1 cup vegetable oil
4 eggs
2 cups of cooked pumpkin
1 teaspoon vanilla
1 cup chopped nuts
1 cup of raisins
2/3 cup of water
3 1/3 cups of flour
1 ½ teaspoons salt
2 teaspoons of soda
½ teaspoon ground all spice
½ teaspoon cloves
1 teaspoon cinnamon
Mix sugar, oil, eggs, pumpkin and vanilla. Add water, flour,
salt, soda and spices. Mix well. Coat nuts and raisin with a little flour. Add
it to the mix. Grease and flour your pans. Bake in 4 coffee cans filled half
full or bake in containers as desired.
Bake at 350 degrees for 45 to 60 minutes. After 45 minutes,
check for doneness with wooden pick in center. If cooked in smaller containers,
cooking time will be less. Do not overcook. (bread loaf pans Est time is 50
minutes)
