Chunky Tomato Avocado Salad
Recipe from Gooseberry Patch 5 ingredients or less cookbook
***this is a plan-ahead recipe, let sit for at least 2 hours
before serving***
1 avocado, pitted, peeled, and cubed
3 plum Tomatoes, chopped
¼ cup sweet onion, chopped
1 TBSP fresh cilantro, chopped
2 to 3 TBSP lemon juice
Gently stir ingredients together; Cover and refrigerate
overnight. Makes 4 servings.
