Ham Casserole
Recipe from Miss Mary’s Downhome Cooking
2 TBSP butter
2 TBSP flour
1 cup milk
2 Cups shredded cheddar cheese
¼ tsp pepper
1 bunch broccoli (2 or 3 stalks)
8 ounces spaghetti, cooked and drained
2 cups of diced cooked ham
Melt the butter in a medium saucepan. Stir in the flour. Add
milk and cook, stirring, until the sauce thickens and comes to a boil. Add
cheese and pepper and cook, stirring until the cheese has melted. Remove from
heat.
Trim the tough ends off the broccoli. Cut the broccoli
lengthwise into quarters. Cook in boiling water or steam until tender, for
about 20 minutes. Drain and chop coarsely.
When the spaghetti is cooked, stir in cheese sauce. Add ham
and broccoli. Turn the mixture into a greased 2-quart casserole. Bake, covered,
in a 350-degree oven 40 minutes, or until hot and bubbly. Yield 4 servings.
