Honey Mustard Chicken Sandwiches
Recipe from Betty Crocker New salad and sandwiches booklet
¼ cup Dijon mustard
2 TBSP honey
1 TBSP chopped fresh or 1 tsp dried oregano
1/8 to1/4 tsp cayenne pepper
4 boneless chicken breasts halves
4 sandwich buns, split
4 slices of tomato
Leaf lettuce
Heat coal or gas grill for direct heat. Mix mustard, honey,
oregano, and red pepper. Brush onto chicken. Cover and grill the chicken 4 to 6
inches from medium heat 15 to 20 minutes, brushing frequently with mustard
mixture and turning occasionally, until juice of chicken is no longer pink when
center of thickest pieces is cut. Discard any remaining mustard mixture. Serve chicken
on buns with tomato and lettuce for 4 sandwiches.
