Mango Nut Bread

Recipe from Family Favorites Hawaiian Cookbook

3 ½ Cups flour

4 tsp baking powder

½ tsp baking soda

½ tsp salt

1 ½ cup sugar

1 stick + ¼ stick soft butter

4 eggs

3 cups mango pulp

1 TBSP lemon juice

1 cup chopped nuts

1 tsp vanilla

Sift together flour, baking powder, soda, salt and set aside. Blend butter until creamy, add sugar and beat until fluffy. Add eggs, one at a time, and beat after each addition. Peel mangos and slice. Measure to 3 Cups, add lemon juice and mash well. Add to creamed mixture. Beat by hand alternately with flour and mix but do not overbeat. Mix in nuts and vanilla. Pour into two greased loaf pans lined with waxed paper. Bake in preheated oven at 350 degrees for 1 hour or until done. Cool before slicing.
