Recipe for Mac and cheese mini cups

3 TBSP butter, divided
2 TBSP flour
1 Cup of milk
1 tsp of salt
½ tsp black pepper
1 cup shredded sharp cheese
1 cup shredded Muenster cheese
½ pound elbow macaroni, cooked and drained
1/3 cup panko or plain dry breadcrumbs
Finely chopped fresh parsley opt.
Preheat oven to 400 degrees. Melt 1 TBSP butter in a large
saucepan over medium heat: grease 36 mini muffin cups with melted butter. Melt
the remaining 2 TBSP butter in the same pan over medium heat. Whisk in flour;
cook and stir for 2 minutes. Add milk, salt and pepper. Cook and stir for 3
minutes or until thickened. Remove from heat; stir in cheese. Fold in macaroni.
Divide mixture among prepared muffin cups. Sprinkle with panko. Bake for about
25 minutes or until golden brown. Cool in pans for 10 minutes; Remove carefully
using a sharp knife. Garnish with parsley. 36 appetizers
