Recipe for Fruity Mustard Chicken

1 Cup peach jam
¼ cup prepared mustard (yellow Mustard)
1 TBSP lemon or lime juice
1 TBSP curry powder
6 boneless, Skinless Chicken thighs
Grease the interior of the slow cooker. In a small microwave
safe bowl, mix the jam, mustard, juice and curry. Cover and microwave on high
for 1 minute. Stir. If jam hasn’t melted. Microwave another 30 seconds. Stir. Repeat
as needed until jam melts. Pat chicken dry. Place in slow cooker. If you need
to create a second layer, stagger the pieces so they don’t completely overlap
each other. Pour the sauce over the chicken, making sure that the pieces on the
bottom are also glazed. Cover and cook on Low for 4 hours, or until an instant
read meat thermometer registers 160 to 165 degrees when stuck into the thighs.
**you can slowly melt the jam on the stove in a heavy
bottomed pot, or a double boiler. **
