Ingredients

·         4 slices of bread

·         2 tablespoons of butter

·         4 slices of cheddar cheese

Instructions

·         Spread butter evenly on one side of each bread slice.

·         Place two slices of bread, buttered side down, in a heated skillet.

·         Layer each with two slices of cheddar cheese.

·         Top with the remaining bread slices, buttered side up.

·         Grill until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.

2. Chicken Caesar Wraps

Ingredients

·         2 large flour tortillas

·         2 cups of cooked, shredded chicken

·         1/4 cup of Caesar dressing

·         1 cup of chopped romaine lettuce

·         1/4 cup of grated Parmesan cheese

Instructions

·         In a large bowl, combine the shredded chicken and Caesar dressing.

·         Lay the tortillas flat and divide the chicken mixture evenly among them.

·         Top each with chopped romaine lettuce and grated Parmesan cheese.

·         Roll up the tortillas tightly and slice them in half.

·         Serve immediately with a side of fresh fruit.

3. Veggie Quesadilla

Ingredients

·         2 large flour tortillas

·         1 cup of shredded cheese (cheddar or a blend)

·         1/2 cup of diced bell peppers

·         1/2 cup of corn kernels

·         1/2 cup of black beans, drained and rinsed

·         1 tablespoon of olive oil

·         Salsa and sour cream for serving

Instructions

·         Heat olive oil in a skillet over medium heat.

·         Place one tortilla in the skillet and sprinkle half of the shredded cheese over it.

·         Top with diced bell peppers, corn, and black beans.

·         Sprinkle the remaining cheese on top and cover with the second tortilla.

·         Cook until the bottom tortilla is golden brown, about 2-3 minutes.

·         Carefully flip the quesadilla and cook the other side until golden brown and the cheese is melted, another 2-3 minutes.

·         Remove from the skillet and cut into wedges.

·         Serve with salsa and sour cream.
