Ranger Crisp Cookies
Recipe from Pillsbury booklet Come and eat 2003
1 Cup Sugar
1 Cup Packed brown sugar
½ cup butter, softened
1/3 cup shortening
1 tsp vanilla
2 eggs
2 ¼ cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp of salt
3 cups of crisp rice cereal
Heat oven to 375- degrees. Lightly grease cookie sheets. In
large bowl, combine sugar, brown sugar, butter and shortening; beat until light
and fluffy. Add vanilla and eggs, blend well.
Add flour, baking powder, baking soda and salt; mix well.
Stir in cereal. Drop dough by rounds teaspoonfuls 2 inches apart onto greased
cookie sheets.
Bake at 375-degrees for 8 to 12 minutes or until golden
brown. Cool for 1 minute; remove cookies from cookie sheets.
