Chicken, Shrimp or Pork Scampi
4 oz uncooked Linguine
3 TBSP Butter
2 TBSP olive oil
2 green onions thinly sliced
2 garlic cloves minced
2 boneless chicken breast, or 20 medium shrimp, or 2 pork
loin chops
1/2 tsp salt, ¼ tsp pepper
½ cup chopped seeded tomatoes
2 TBSP lemon juice
1 TBSP fresh parsley
Grated Parmesan cheese
Cook pasta. In
Skillet over medium heat add butter, olive oil cook onion and garlic. Salt and
pepper , add the chicken to skillet cook until done. Remove and keep warm. In the
same skillet combine tomato, lemon juice and parsley heat through. Drain pasta,
add to and toss with mixture. Plate pasta and add your cooked chicken, shrimp
or pork. Sprinkle with parmesan cheese. 2 servings
