Roasted Asparagus
Recipe from Better homes and gardens annual 2006
1 ½ pounds fresh asparagus, trimmed
2 TBSP chopped fresh herbs or 2 tsp dried herbs (Italian
seasoning, thyme, oregano, rosemary etc whatever you want)
2 TBSP olive oil
Salt and pepper
1 oz parmesan cheese, shaved
Preheat oven to 450 degrees. Heat a shallow baking pan in
the oven for 5 minutes. In a large bowl toss asparagus with the herbs, oil and
salt and pepper. In hot baking pan spread asparagus in a single layer. Return
to the oven. Roast uncovered until spears are tender when pierced with a tip of
the knife bake for about 10 to 12 minutes, depending on spear thickness may
need to stir once while roasting. Remove pan from oven. Transfer asparagus to
platter and sprinkle with shaved parmesan cheese. Makes 4 to 6 servings.
