Red Onion Marmalade
Recipe from Sunset recipe annual 1991
2 TBSP butter
2 pounds red onions, peeled and thinly sliced
1/3 cup sugar
½ tsp pepper
1 cup white wine
½ cup red wine vinegar
In a 10-to-12-inch frying pan, melt the butter over medium
heat. Mix in onions, sugar, and pepper. Cover and cook, stirring occasionally,
until onion is very limp, and its juices have evaporated, 10 to 12 minutes. To
Onions add wine and vinegar; Stir occasionally until evaporates, about 25
minutes. Serve warm if made ahead, let cool, cover, and chill for up to 3 days.
Reheat and serve. Makes 2 ½ cups.
