Lemon Go Lightly cookies
Recipe from Pillsbury bake off and other favorites treasury 1989
2 Cups flour
2 cups mashed potato flakes
1 cup sugar
1 cup firmly packed brown sugar
½ cup to ¾ cup chopped nuts
1 tsp baking soda
¾ cup butter, melted
1 tsp grated lemon peel
2 eggs
¼ cup sugar
Heat oven to 350-degrees. In a bowl put flour, and combine
all ingredients except ¼ cup sugar, blend well. (mixture will be crumbly).
Firmly press into 1-inch balls, roll in the ¼ cup sugar. Place 2 inches apart
on ungreased cookie sheets. Bake at 350-degrees for 9 to 12 minutes or until
golden brown. Cool 1 minute, remove from cookie sheet 6 dozen cookies.
