Using Leftover Ham

 After the holidays we all have left over foods to use. Today I will be sharing three recipes for using Ham. You can can use the leftover ham that you cooked anytime. You can also substitute canned ham in many of these recipes. 

Cooked ham can be used in so many ways, here are just few easy recipes. I will be highlighting 3 cook books from my collection today. One recipe from each book. Enjoy. 




 The First Recipe comes from Betty Crockers' Casserole Cookbook 1983

Layered Ham Dinner

1 Package 9oz frozen cut green beans

1 can condensed cream of celery soup

¼ cup mayonnaise

1 Tablespoon prepared mustard

6 oz fully cooked ham cut into ¼ inch strips

1 cup shredded Cheddar cheese

¼ cup dry breadcrumbs

Rinse frozen green beans under running cold water to separate and then drain. Place beans in ungreased 1 ½ quart casserole dish. Mix soup, Mayo, and mustard: Spoon half of the mixture onto the beans. Top with Ham: Spoon remaining soup mixture onto ham. Sprinkle with cheese and breadcrumbs. Cook uncover in 350-degree oven until hot and bubbly about 20 minutes.

Ham Patties with Sour Cream 

Combine 2 cups ground cooked ham, 1/2 cups soft bread crumbs, 1/4 cup chopped green onion, 1/3 cup milk, 1 slightly beaten egg, dash of pepper. 

Shape into 4 large or 6 small patties. Brown slightly on both sides in a small amount of fat(oil, lard, etc)

Heat 1 Cup of sour cream just until hot serve with patties. Top with chopped green onions makes 3 or 4 servings. 



The Third Recipe comes from the Better Homes and Gardens New Cook Book 1989


 

Ham and potato Scallop

1 ½ cups fully cooked ham, Cubed

½ cup chopped onion

4 medium potatoes washed, peeled and thinly sliced (4 cups)

1 can condensed cheddar cheese soup or cream of mushroom or cream of celery soup

½ cup milk

¼ cup fine dry breadcrumbs

2 Tablespoons snipped parsley

1 tablespoon butter melted

In a 1 ½ quart casserole dish layer half of the ham, half of the onion, and half or the potatoes. Repeat layers. Mix soup, milk, and ¼ teaspoon of black pepper. Poor over the potatoes. Bake uncovered in a 350-degree oven about 1 hour or until Potatoes are almost tender. Mix crumbs, parsley, and butter. Sprinkle over the top the casserole and bake uncover for 15 more minutes. Let stand 10 minutes serve 4.
